Greenaway will add a fourth property to his portfolio with the duel opening of ‘Mark Greenaway at the Haweswater Hotel’ and ‘Brasserie 37’. The launch is set for 15th January 2023.

In 2019 Mark opened Grazing by Mark Greenaway, in Edinburgh’s Waldorf Astoria Hotel offering guests a leisurely and relaxed dining experience whilst providing them with the finest fresh ingredients from local suppliers in Scotland.

‘Mark Greenaway at the Haweswater Hotel’ will be a fine dining restaurant offering expertly crafted and refined tasting and al a carte menus, encapsulating the very essence of effortless creative elegance, reflecting Mark’s ethos of seasonal, local produce in a truly picturesque location.

Star dishes will include enticing new creations alongside some of his signature dishes such as BBQ shiitake mushrooms on toast or 11-hour slow roast pork belly and indulgent sticky toffee pudding soufflé as demonstrated by the chef on Channel 4’s Sunday Brunch.

The hotel will also become home to ‘Brasserie 37’, named after the year the hotel was completed. Guests will find warm hearths of roaring log fires, an art deco bar, a relaxing environment, exquisite reassuring dishes combined with Mark’s signature refinement, with an equal focus of seasonal and local produce.

Mark said: “Being part of such a historic building in the inspirational and magnificent Lake District is a chef’s dream. A stunning local larder of world class ingredients, with a sense of potential and a true home from home feel in a picturesque location.

Our guests will experience some new and unique dishes in serene and majestic yet snug surroundings. Relaxing and accessible to all, an experience we hope they will wish to return for time and again. Our focus will be on delighting our diners with memories to cherish, a journey with splendid food, drink and hospitality in a friendly and graceful fashion.

Being given the opportunity to head up two restaurants within the same building is a great opportunity and offers the guests alternative options for dining within the hotel”.

Stephen O’Sullivan, Owner of The Haweswater Hotel said: “The Haweswater is unique and attracts people from far and wide.  Recognising the need to offer diners something truly special to match the surroundings, we see this as an exciting new chapter for the hotel and very much look forward to welcoming Mark to the team.”

As Mark builds a more expanding restaurant portfolio, he said, “I see this as the next step in the evolution of our brand. Our plans, like most businesses were put on hold due to the difficult period of Covid. We are now excited to be moving forwards again and opening the restaurants within The Haweswater Hotel as the next step in this project”.

Mark Thexton Operations Director of The Haweswater Hotel Said

“Our Fine Dining Menu has gone from strength to strength in recent years and 2022 is no exception as we welcome Mark Greenaway to The Haweswater Hotel as he continues to delight our customers with his much-loved dining concepts. The Haweswater Hotel will offer our Guests the decadence and relaxation that everyone needs in our busy lives”
