World Oceans Day is a global celebration taking place on the 8th June. With hundreds of events around the world, it helps raise the profile of the Earth’s waters, to inspire more involvement in conserving the resource on which this planet depends.

This year, Relais & Chateaux and its collection of wonderful hotels, is celebrating this day by creating exquisite fish menus. One of the hotels, Glenapp Castle in Scotland, has teamed up with the local fisherman to curate a menu that is totally sustainable and, of course, delicious! On the menu is mackerel, mullet and crab - all jazzed up with herbs, fruit and vegetables, picked directly from the hotel’s kitchen garden.

The castle’s chefs have been working with the local ‘Galloway Smokehouse’ for over 20 years, sourcing both smoked products and fresh fish. The hotel’s chefs and local fishermen establish what’s in season; catching fish that is at its best, and out of spawning. The fish is line-caught, guaranteeing high quality and sustainability.
