Each year will herald a new vintage. Like a fine wine, our Caithness botanicals are dependent on our climes resulting in truly handcrafted scottish gin & vodka that will subtly change year on year, BUT which are STILL UNDENIABLY exceptional dunnet bay distillers spirits.

We are Dunnet Bay Distillers. Distillers of exceptional spirits – it’s in our nature.
Unsurprisingly we are located in the spectacular bay of Dunnet, where the freshest of air and the finest of water are in abundance. Our goal is to create spirits which reflect the Caithness way. We hand distil slowly, thoughtfully and passionately to create our exceptional products.
Working with the oldest still makers in the world our bespoke pot still, Elizabeth, has been uniquely designed just to create our spirits. Using a traditional handmade copper head along with botanical vapour basket, it is a small batch process of 500 litres. This ensures tremendous care can be applied to achieve best results. Each bottle is filled, hand-waxed, batch numbered and signed before it leaves our distillery.
Rock Rose Gin
Rock rose gin gets its wonderful flavour from a carefully selected and put together creation of local and traditional botanicals.
Each one meticulously chosen for their flavour properties to create the perfect taste.
After 55 experiments by martin & claire the final recipe was chosen to give a wee taste of caithness and the very first batch was distilled on 17th august 2014.
Holy Grass Vodka
Found on the banks of Thurso River, Holy Grass gives this Vodka a wonderful, unique taste.
Delicate and fresh vodka with a creamy smooth finish.
A celebration of local produce and ingredients, the spirit is also infused with a carefully crafted vapour of Highland apples and apple juice, to complement the sweetness of the Holy Grass.
